1 pound Chicken Breast, chopped in chunks
1 can chopped tomatoes, drained or substitute 2-3 cans Rotel canned tomatoes, drained
2 cans white cannelli or white kidney beans (any white bean will do)
1 small can green chilies
2 cans chicken broth
5 green onions, chopped
2 Tablespoons Olive Oil
4 cloves garlic
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon coriander seed, crushed
Salt, pepper, cheddar cheese and crushed tortilla chips.
Saute chicken in olive oil. Remove chicken and set aside. Saute onions and garlic in remaining oil until tender.
Add canned tomatoes, chicken broth and seasonings. Simmer 15 minutes.
Add chicken and beans. Simmer another 15 minutes. Serve in bowls topped with cheddar chees and tortilla chips.
